It’s a blessing and a curse . . . but kind of more of a curse.

Or at least that is how I’m feeling right now.

I spent the weekend working on the baby’s nursery set, and I’m sort of obsessing over the crib skirt because I cut some of the fabric two inches too short.  So it will work, but only with some tricky finagling, and it won’t be as pretty.

Or it will be just as pretty, but I will always know.

In all likelihood, I will be going to the fabric store and buying more pastel pink and recutting . . . and doing some seam ripping . . . more folding . . . more ironing . . . more sewing . . .

And we are in the process of redesigning my blog . . . .and by “we” I mean my sweet, loving, amazing, studly husband is working tirelessly to get it the way I want it.  And by the “way I want it” I mean exactly the way I want it.    Like I want it to be totally perfect before it goes live.  Every last page just so, all the colors perfectly matching, the fonts matching . . . .

The blessing to being a Type A personality is that when things do finally work out, they work out really really well.  Like this bread!

This bread is made with fresh strawberries and bananas AND THEN taken to the next level with some delicious strawberry banana Greek yogurt (if you can’t find that, just sub in some vanilla).  It makes it so moist, delicious and flavorful.  This bread makes a really yummy breakfast when you pair it with a steamy hot cup of coffee.   So yummy in fact that for a moment you forget what’s on your to do list 😉

Strawberry Banana Bread

Ingredients

  • 2 1/2 cups all purpose flour
  • 3/4 cup sugar
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 3 very ripe bananas, mashed well
  • 4 TBSPs butter, melted and cooled
  • 2 eggs, beaten
  • 5.3 oz strawberry banana Greek yogurt (you can also use vanilla)
  • 2 tsp vanilla extract
  • 1 cup diced strawberries

Instructions

  1. Preheat your oven to 350 degrees and spray a 9 by 5 inch bread pan with cooking spray.
  2. In a medium bowl, whisk together the flour, sugar, baking soda, and salt.
  3. In a large bowl whisk together the mashed bananas, melted butter, eggs, yogurt, and vanilla.
  4. Gently add the flour mixture to the egg mixture, folding them together until just combined.
  5. Gently stir in the strawberries. The batter will be very thick.
  6. Pour the batter into the bread pan and bake for 60 to 65 minutes (mine took 63 minutes) or until a toothpick inserted in the middle of the bread comes out clean or with a few crumbs.

    I’m not a type A at all.. but I still think we can be friends. Because I wanted to make this EXACT BREAD this week! I had some ripe bananas and strawberries and I was like ‘Make a bread out of it!’ I didn’t. But I will now and use your recipe. It looks great Lisa!

    I love seeing the big chunks of strawberry in this bread. It reminds be of a bread they used to sell at a coffee shop on campus. I haven’t had the bread since I graduated college. I can’t wait to make this!

    Seam ripping, oh the agony! Every time I go to sew I cross my fingers I don’t have to get that blasted thing out. I haven’t been so lucky yet.

    I love the combination of strawberry and banana. Love that you bumped it up with the strawberry/banana yogurt. I often bake with yogurt but probably wouldn’t have thought to mimic the flavor profile and would have stuck with plain or vanilla. I’ll have to remember that! 🙂 [#PinItThurs]

      Yes, I think they can be muffins, and yes, adjust the baking time. If I was testing this recipe I would start with just that and go from there, maybe add 1/2 tsp baking powder.

    I made your Strawberry Banana Bread this morning. Amazing! The house smell wonderful while it was in the oven. Cooked in just sixty minutes. Super easy to prepare. This will be something I make again. Didn’t change a thing. Thank you so very much!!

    Going to make this for Easter. Do you think it would freeze well if I make it now, a week ahead? I just bought 2 pints of strawberries and I have 3 bananas in the fridge, calling out to me. Thanks.

      Eeeek! Sorry I am just now getting to this. For future reference of anyone else who comes across this, I haven’t tried freezing it, but I think it would work just fine as long as it’s not more than a month or two and it is wrapped tightly and in an airtight container or bag.
