Healthy Peanut Butter Dip {One Recipe, Five Lunches}

I have a painful admission . . . . I am horrible at packing school lunches! In fact, when I was at the end of my pregnancy last spring, I had Nathan sign Gavin up for as many school lunches as we thought he would eat, because even though it was more expensive and less healthy than sending him with a lunch we packed, it was just the first thing I wanted to take off to do list.

When I did send Gavin to school with a packed lunch last year, 99% of the time it was the exact. same. thing: a peanut butter and jelly sandwich with a sliced apple. I know. Don’t judge me, mmmkay?

So this year I would like it to be different. I would like to send him to lunch with variety. And I know that means getting creative.

Have you seen the healthy peanut butter dip that seems to be all over blog land? In most cases it involves yogurt, honey, and peanut butter. Definitely healthy, but . . . I decided to take it up a notch.

Ever since I made my two ingredient skinny veggie dip, I have fallen in love with the idea of pureed fat free cottage cheese. Stick with me, okay? I know, it sounds odd, but seriously, it is like creating cream cheese, but without all the fat and calories and packed with protein.

So this dip is made primarily with cottage cheese (almost no sugar, and 13 grams of protein), unsweetened apple sauce, peanut butter (duh), agave syrup, and some vanilla. I could literally eat this stuff by the spoonful. To me it tastes like a dessert dip, but it’s super healthy. Very low sugar content, and super high in protein. When it comes to my kiddos, I’m always looking for a way to pack in as much protein as I can. I can get them to eat fruit, veggies and carbs no problem, but that protein, we always struggle.

This dip is delicious, and when paired with an apple, some graham crackers, and a little Horizon milk, you have a great lunch for a kiddo. Annnnnd . . . when you mix it up a little, you can create four more lunches out of this dip. You know, for variety sake.

Roll out a piece of whole wheat bread with a rolling pin, spread on some peanut butter dip, top with some low sugar jelly, and roll it up. Stick it in the freezer for about 10 minutes, and then it slices really pretty. Toss some apples, carrots, and Horizon milk in and add a lunch box joke for fun!

In a small container, layer some yogurt, some peanut butter dip, and a little granola. It tastes like a dessert, but will totally keep your kiddos satisfied!

Trail Mix Dip | www.wineandglue.com | A fun twist on lunch!

 Add some raisins, chocolate chips, nuts, and seeds and serve with some veggies for a delicious dip lunch!

Stuffed French Toast Sticks | www.wineandglue.com | A super delicious lunch or breakfast!

 Spread some peanut butter dip between two pieces of bread, and cut into four even sticks. Mix together two eggs and a tiny bit of milk or cream. Let bread soak for about two minutes a side. Cook over medium heat until it crisps up (I like to cook mine a little on the sides too). Add some fruit and you are good to go.

I had some others too that I didn’t photograph, like a banana roll up (a whole wheat tortilla shell, a little peanut butter dip, and a banana all rolled up) and a fluffernutter sandwich ( two pieces of bread with some peanut butter dip and a little marshmallow fluff for a treat)!

Healthy Peanut Butter Dip {One Recipe, Five Lunches}

Ingredients

  • 1/2 cup fat free cottage cheese
  • 1/4 cup creamy peanut butter
  • 1/4 cup unsweetened apple sauce (see note)
  • 1 1/2 tsp vanilla extract
  • 1/2 tbsp agave nectar

Instructions

  1. Blend cottage cheese in a food processor until smooth.
  2. Microwave peanut butter for about 10 seconds to soften, blend it into the cottage cheese. Then blend in the rest of the ingredients.

Notes

To make more of a spread than a dip, use less applesauce.
