This Healthy Taco Salad is so delicious, and so filling, but without the chip and salsa hang over you get from your favorite Mexican restaurant.
So I’ve been debating about whether or not to write about this for a while. I want to talk about it, but I don’t want to sound like I’m on a soap box. I like being light and funny here (for the most part), but I also love that I have a voice that one or two people (maybe?) read, and I take that voice really seriously.
For a while now, I’ve been working on developing a new habit . . . telling people nice things when they come to mind. I know, it sounds ridiculously simple, so simple in fact that I shouldn’t even have to think about doing it . . . but I do have to. Life is too busy sometimes. And though that’s not an excuse, it kind of explains why sometimes it doesn’t come to mind to tell someone how grateful I am to have them in my life.
But it makes a difference.
I didn’t really know how much of a difference, until I mentioned to one of my friends what a fantastic human being she is after reading something uplifting that she shared on FB. She told me that my quick little two lined message couldn’t have come at a better time . . . . her home had been robbed that day, and she was feeling a little down about humanity.
So since then I’ve really been making an effort, an effort to honestly share with people when they do something that makes my life a little easier, when I’m touched by what a great person they are, or when I’m just feeling grateful to have them in my life.
And you know what?
I’m doing it with my family. Why is it so much harder to tell my family how grateful I am for them?? (Probably because I’ve cleaned up their vomit, their poop, and their broken crayons everyday for the last six and a half years . . . ) But maybe that’s who you should start with, right? The people who it is hardest to thank?
As we go into the month of November and the holiday season, maybe don’t just think about what you are grateful for, share it. And I will try to do the same. (And if you know me personally, and haven’t experience my need to thank . . . it’s a work in progress )
So, now that I’ve said, that should we talk about this Healthy Taco Salad? This is one of my new favorite family dinners. And the reason why is because I can customize it so easily to what everyone wants. My kids really only like the meat and the beans with a side of cherry tomatoes. Nathan likes the meat, the beans, the sour cream, and a pile of chips to go with them. And I like it just as you see above. It’s packed with lean protein, it’s on a big bed of Romain lettuce with some tomatoes, and then I top it with some jalapeños, some light sour cream, and some salsa. The sour cream and salsa act like a perfect dressing. And it’s all so delicious and filling without any of the guilt.
- DIY Taco Seasoning
- 1 pound of ground turkey
- 15 oz of canned black beans
- 2 romain hearts, chopped
- 2 tomatos, diced
- light sour cream
- Cook the ground turkey over medium heat with the taco seasoning, breaking it up as you go.
- While the turkey is cooking, heat the black beans (with the liquid from the can) over medium heat.
- When the turkey is done and the black beans are heated through, build the salads individually by topping the romaine lettuce with strained beans, turkey, tomatoes, sour cream, salsa, and jalapeños.
