These are the best pancakes I have ever had. Which I realize is quite the statement seeing as how they come just on the heels of me posting these amazing (and I still stand by the fact that they are amazing) Copycat Pancake House Pancakes.
These pancakes are melt in your mouth, cry tears of joy, and then snarf down another good. These are so good you don’t even want to smother them in butter and syrup because they are so amazing as is.
Absolutely amazing because they start with my new favorite dessert, Yulu Honey.
I’m kind of addicted to Yulu. I love all of their flavors, but I am especially addicted to the honey. Like . . . I buy my local store out whenever I go . . .
And I’m not the only one. My older kids don’t like yogurt, so I wasn’t hopeful that Piper would like it, but she was hooked after the first spoonful. Now when she sees the blue label she literally starts yelling and pointing until I give her a bite. Of her own. Vanilla flavored.
I think that one of the reasons Piper loves Yulu so much is because it doesn’t have the tartness that you would normally think of with Greek yogurt. Yulu is an Australian inspired yogurt that is packed with 9 grams of protein. I could go on and on gushing about my love for a breakfast for Piper that has 9 grams of protein and a snack for me that seems like a dessert with 9 grams of protein. #winningatlife
Let’s talk about these pancakes for a minute. Because, seriously.
So they started when I remembered my mad love affair with The Pioneer Woman’s Sour Cream Pancakes. They are epically good. Creamy, delicious, not like a hockey puck . . . so good!!
So I was thinking . . . what if you replaced the sour cream with yogurt . . . ?!?!?!? OMG! Soooooo good! It works so well in the pancakes. And what’s even better, you can swap out any of Yulu’s delicious flavors. Yulu comes in honey (the best), vanilla bean, strawberry, raspberry, and blueberry. I’ve made these pancakes with all but the strawberry, and they were all fantastic! So fun, right??
But the honey is the best.
- 1 5.3 oz container of Yulu Honey Yogurt (see note)
- 3 1/2 TBSPs all purpose flour
- 1 TBSP granulated sugar
- 1 tsp baking soda
- 1/4 tsp salt
- 1 egg
- 1/4 tsp vanilla extract
- Preheat a skillet over medium low heat.
- Stir the yogurt well and pour into a medium sized bowl. Add in the flour, sugar, baking soda, and salt. Stir until just combined.
- In a smaller bowl whisk together the egg and vanilla extract.
- Pour the egg mixture into the yogurt-flour mixture and stir until just combined.
- Spray the skillet with cooking spray.
- Pour 2 tbsp of batter at a time onto the skillet. When bubbles begin to appear on the top of the pancake, flip it over and cook for another minute.
- Serve while warm.
I've made these with vanilla, honey, raspberry, and blueberry yogurt. All of them were great. Just make sure with the fruit based yogurts to fully stir in the fruit to the yogurt before making the batter.
