You guys.

I’ve been summoned for jury duty.  Now . . . let me be clear.  I’m all about doing my civic duty.  But . . . maybe I’d prefer to do it at a time when I had easy access to childcare and I wasn’t a few weeks out from putting my house on the market (!!!) and needed to paint and pack all.the.things.

So given that I’ve already requested to postpone it . . . and was denied.  And I don’t just mean denied, I mean DENIED.  Like they put it in all caps in the notice just to make it abundantly clear that I was in it.  So given that this is something that is going to happen, can we brainstorm all the things that I can say that will make them really not want to use me as a jurist?

I looooooooove me a good mojito.  But given that like the second ingredient is sugar, sugar water, or some combination of both, my waistline doesn’t love them.  So I took a page out of my friend, Holly’s book and came up with these Easy Skinny Mojitos.

The die hard mojito lovers out there might string me up by my cocktail lovin’ toes for this one, but it turned out so amazing that I don’t even care.  And now you have another thing to do with all that amazing mint you have been growing all summer.  Though if you are anything like me, you didn’t even try to convince yourself that you were going to use it for anything but mojitos.

Easy Skinny Mojito

Ingredients

  • juice of one lime
  • 6 fresh mint leaves
  • 2 oz of white rum
  • 12 oz of diet lemon lime soda (like 7UP or Sprite)

Instructions

  1. Divide the mint leaves and lime juice between two glasses.
  2. Add 1 oz of rum to each glass and muddle (I like using the bottom of an ice cream scoop to mush everything up).
  3. Add a little ice, top with the soda, and stir to combine.
