Strawberry Bellinis are a perfect champagne cocktail for parties or brunch. Gorgeous pink color, bright strawberry flavor, they’re a delightful twist on the traditional cocktail.

In a champagne glass, the Strawberry Bellinis has a gradient red color, bubbly, and a single strawberry in the glass.

These beautiful Strawberry Bellinis are one of my very favorite cocktails for brunch, girls’ nights, holidays, you name it! The gorgeous pink color makes this an ideal cocktail for a baby shower or bridal shower, and the flavor is light, sweet, and bubbly. Strawberry lovers will adore this delightful twist on a classic cocktail.

STRAWBERRY SYRUP FOR BELLINIS

Traditional Bellinis are a champagne cocktail that combines the sparkling alcohol with peach nectar. This recipe is just like that, only I make it with strawberry syrup. YUM! The sweet syrup is really easy to make with only three ingredients! Just combine ripe strawberries, sugar and water in a sauce pan and boil while stirring constantly. Then let it cool. I love the idea of setting it out in a pretty dressing container with a bottle of champagne and let guests mix their own cocktails. It takes very little effort and looks beautiful on a brunch table.

TIPS FOR PERFECTLY PRETTY STRAWBERRY BELLINIS

  • Pick your favorite champagne for this cocktail. I like to use a sparkling Moscato.
  • If you like a clearer strawberry syrup, remove the whole strawberries after boiling for a few minutes and let the simple syrup cool completely.
  • For a more dense syrup with more strawberry flavor, mash the berries up in the sugar water and boil it for about three more minutes. Then blend it all up in a blender and cool before adding it to the champagne.
  • If you want this cocktail to be extra pretty, you are going to want to use a cheese cloth to strain the strawberry syrup so you remove every last fiber and seed. I like the fuller strawberry flavor so I kept it all in and blended it together.
  • The champagne and berry mixture won’t blend together naturally, so if you or your guests want it mixed together, stir gently so you don’t stir out all those delicious bubbles of the champagne.
  • You can make these pretty drinks non-alcoholic if you like. Just add club soda or lemon lime soda to the simple strawberry syrup. Delish!

Strawberry Bellinis

Ingredients

  • 2 cups frozen strawberries
  • 1 cup water
  • 2 TBSPs granulated sugar
  • chilled champagne I used a sparkling moscato
  • fresh strawberries to garnish optional

Instructions

  • Combine the strawberries, water, and sugar in a medium saucepan over low heat. Bring to a boil. To make a clearer syrup, remove the strawberries, and allow the syrup to cool completely.
  • Otherwise, break up the strawberries with a fork and allow the syrup to boil for about three minutes over low heat, stirring often. Transfer to a blender, blend, and strain through a mesh strainer. For a cleaner syrup, strain through a cheese cloth.
  • Allow the syrup to cool completely. To do this faster, transfer to a mason jar, fill a large bowl with ice, and put the mason jar in the bowl with top open, rim above the ice.
  • Pour a small amount of strawberry syrup (once cooled) in the bottom of a champagne flute and fill with champagne.

      You can make the syrup ahead of time, but obviously you want to wait to mix it with the champagne until right before serving.

    Is this recipe for one mimosa or a pitcher

      Both! Make the syrup and then you can make just one, or you can about a quarter cup to a pitcher and add the champagne, adding more syrup to each glass depending on how people like their cocktails.
