This is The BEST Corn Salsa! It is super easy to make and totally delicious! A win for any party or taco night!
This week was full of work and travel and not nearly enough time smooshing my face into that of my kids, so this is going to be short and sweet and you will forgive me, yes?
So it is perhaps a little bold of me to call this the BEST corn salsa, but you guys, it seriously was amazing. It was a total home run right out of the gate and I could not stop eating it. I made it to go on some tacos that I’m going to be sharing with you next week, but realized very quickly that I could make a meal just out of this salas itself.
After swiftly wolfing down three of the tacos without even really coming up for air, I decided that this corn salsa was basically the best thing I’ve ever eaten and it deserved a place on Wine & Glue of it’s own. And thus, you have this recipe for the BEST corn salsa. Ever. In the history of the world. Infinity. Squared.
Your family will love this as sort of a side/topper on taco night, but they will also love it just with some chips when you guys are snacking. And this is the perfect thing to make if you are having people over for game day . . . . or if you have had the most stressful day ever, and the only thing you need in life is chips and wine for dinner with some of the BEST corn salsa. 😉
- 11 oz canned corn, drained
- 1/2 a small red onion, diced
- 1 slightly firm avocado, diced (see note)
- 4 oz green chiles, drained
- 1 TBSP lime juice
- 1 TBSP cilantro, chopped
- 1/2 tsp kosher salt salt
- Combine all ingredients in a small bowl, toss to combine, and serve with chips.
