I love roasted asparagus so much. At least once a week in the summer I eat an entire bunch by myself. I am slowly but surely getting my kids to fall in love with it too. If you aren’t a fan of asparagus, it’s possible that you just haven’t had it prepared correctly.

Buckle up, because this asparagus recipe is going to make you fall in love.

Asparagus in the oven  is easy to prepare and compliments so many dishes perfectly. I made this as a side to some oven fried fish, but this is great next to so many recipes.

Why You Will Love this Oven Roasted Asparagus

  • It’s the perfect side dish.
  • It’s versatile. Leave out the lemon if you don’t like that, or add parmesan if you are craving some cheese!
  • Minimal prep time.
  • The roasting brings out the perfect flavor and will make you fall in love!

Picking the Perfect Asparagus

Make sure when you are buy asparagus that you look for bunches where most to all the stems look plump. If there are stems that look wrinkly in there, move along. You also want asparagus that looks fresh at the top and not wilted.

How to Store Asparagus

If you aren’t making this roasted asparagus recipe the day you come home from the grocery store, you are going to want to store it in your refrigerator.

  • Give the asparagus a little trim.
  • Put it in a glass with just an inch or two of water. No need to fill the whole glass.
  • Store the glass in the refrigerator until you are ready to use.

Cutting Your Asparagus

When you are ready to make your baked asparagus, take the jar out of the refrigerator. Give the asparagus a light wash.

You want to take off a bit of the bottom, so you are left with just the fleshy part of the asparagus and none of the woody stem. As you can see in the photo below and the video in the recipe card, asparagus makes it super helpful to know where to cut off the base. You can just snap it and it will naturally break where the edible portion begins.

Either snap all of the asparagus, or snap one piece and use it as a guide as to where to cut the rest. You can see that the first asparagus is the one I snapped and I am using the rest to guide where to cut.

Or you can just snap all of them. It takes a little longer, but there’s something satisfying about it.

How to Cook Asparagus

  1. Grab your freshly washed and snapped asparagus.
  2. Line a baking sheet with parchment paper.
  3. Coat the asparagus with olive oil. After making these two times you will have a sense of how much you need and you won’t need to measure in the future.
  4. Add a little fresh lemon zest and some lemon juice.
  5. Add some garlic salt.
  6. Toss gently with your hands. Throw them in the oven.

Ingredients

  • 1 bunch asparagus washed and trimmed (see note)
  • 1 tablespoon olive oil
  • 2 teaspoons lemon zest
  • 2 teaspoons lemon juice
  • 1/2 teaspoon garlic salt

Instructions

  • Preheat your oven to 375 degrees.  Line a baking sheet with parchment paper and set a side.

This is my kids’ favorite! I hated asparagus when I was a child, but my kids love it! I had no idea it was so darn easy to make! We also like it with kosher salt and freshly ground black pepper. And the lemon for sure!
