With summer break just on the horizon, I’m kind of . . . . freaking out.

When you are a working from home mom life is often wonderful and amazing – to do something you love while making every snack, being there for every nap, reading all the books, picking out all the dresses, doing all the school pick ups . . . I get the best of both worlds.

But it’s also CRAZY hard! I don’t want to ignore my kids, I don’t want to miss a thing, I want them to have all. the. fun. But mama has to get her work done, yo.

So that’s why I feel like I have to really make the special moments . . . special.

Last summer one of our favorite things to do with the kids was to do ice cream sundae bars on the deck after dinner. It took almost no time to put together, but it meant the world to our kids and they still talk about it. So I was thinking . . . what about a No Bake Cheesecake Bar??

Horizon Organic is all about kids and letting their snacks fuel their creativity and imagination. And I couldn’t agree more, my kids get HANGRY (anger sprung from hunger = HANGRY). I am all about keeping them full with good foods that I feel good about, like Horizon snacks and their amazing mac n cheese that my kids request at least twice a week.

And I thought that in addition to letting Horizon snacks fuel my kids’ imagination . . . I could let my kids’ imaginations fuel their Horizon desserts!

Okay! So this is how you do your Make Your Own No Bake Cheesecake Bar! You need some Horizon Snack Grahams in Cinnamon and Chocolate, toppings (M&Ms, blueberries, strawberries, toasted coconut, etc), and no bake cream cheese filling (see recipe below).

Add four crackers to the bottom of a 4 oz mason jar, use an ice cream scoop to crush them, add cream cheese filling, and top!

As you can see, my kids kind of just went with a “Gimme Some Candy” theme. But in case you want some direction . . .

  • 4 Horizon Chocolate Snack Grahams
  • Scoop of No Bake Cheesecake Filling (see recipe below)
  • Sprinkle on toasted coconut and chocolate chips
  • Drizzle with caramel sauce

No Bake Chocolate Covered Strawberry Cheesecake Cups! So easy, so delicious!

  • 4 Horizon Chocolate Snack Grahams
  • Scoop of No Bake Cheesecake Filling (see recipe below)
  • Sprinkle on diced strawberries and chocolate chips
  • Drizzle with chocolate sauce

So fun right? Though to be completely fair, my kids were way more excited about the snack grahams than the actual cheesecakes, lol!

Make Your Own No Bake Cheesecake Bar

Ingredients

  • For Crust
  • 4 Horizon Snack Grahams per cheesecake cup
  • For Filling
  • 8 oz cream cheese at room temperature
  • 8 oz cool whip at room temperature
  • 1 tsp vanilla extract
  • For Toppings
  • M&Ms
  • toasted coconut
  • chocolate chips
  • blueberries
  • diced strawberries
  • sprinkles
  • caramel sauce
  • chocolate sauce

Instructions

  • Mix together the cream cheese, cool whip, and vanilla extract until smooth.
  • For each cheesecake cup, crush four snack grahams at the bottom of each 4 oz mason jar.
  • Add a scoop with cheesecake filling.
  • Top with all your favorite toppings!

    You do get the best of both worlds! I can imagine that’s both nice and stressful by turns. This cheesecake bar is definitely the cutest and smartest idea! I cannot imagine a kid (or adult) who wouldn’t love it!

    How many servings is the recipe?

      It depends on how much filling you uses for each little cup, but I would say between 16 and 20. By comparison, it’s about the same amount of filling it would take to make a single pie where you would get 8 big slices.
