So since starting this blog, I have had a number of different wine companies, bloggers, experts reach out to me . . . . wondering about my favorite types of wine, what I best like to pair it with . . .
And when my brother in law heard this, he could not contain his laughter. He’s a pretty composed guy, and it was like fall out of your chair laughter.
Because while it is very true that I love a good glass of wine, I am seriously uneducated in the wine department. I mean, I know what I like . . . . but as far as how to pair it and what temperature to serve different types . . . I’m often very lost.
Guys. The name of the blog is about my love for it. Not my knowledge of it.
So when Banfi reached out to me with several bottles of wine as well as this amazing handbook with all sorts of basic information about the wine broken down, I was super pumped! (And if you want to get more information about pairing wine and basic facts, check out their blog!)
One of the wines they sent me was their Pacific Rim Dry Riesling. It is absolutely delicious. I shared a bottle of it with some friends while eating some spicy Thai food, and it was totally phenomenal. But I knew that I wanted to also try it with something simple that I could make at home on a busy weeknight.
Enter this amazing One Pot Creamy Shrimp Pasta. You guys, this legit tastes like Noodles’ Penne Rosa, which is one of our favorite easy on the go meals with the fam. This could not be easier to make, and if you are intimidated to cook with raw shrimp, please let this be the first dish that you make! You start with some frozen raw shrimp that has been peeled and deveined. Run it under cold water for about 15 minutes and it will be all ready to go!
This comes together in under 30 minutes, and has so very little prep. It’s perfect for a weeknight meal, and it really is totally perfect with the Pacific Rim Dry Riesling. It has a tiny little kick from the spicy red pepper flakes and the riesling goes well with a little spice! It’s also the perfect light compliment to the richness of the cream sauce.
Look at me talking about wine and food pairings!
- 1 TBSP olive oil
- 2 cloves garlic, minced
- 29 ounces tomato sauce
- 2 cups chicken broth
- 1/2 tsp crushed red pepper flakes
- 1/2 TBSP dried basil
- 1/2 TBSP dried parsly
- 16 ounces penne
- 1 pound shrimp, raw and deveined
- 1 cup heavy cream
- shredded parmesan for serving
- fresh basil for serving
- Heat olive oil in a large skillet over medium high heat. Add garlic and cook until it becomes fragrant, about 30 seconds.
- Add tomato sauce, chicken broth, red pepper flakes, basil, and parsly and fettuccine, stirring to combine. Season lightly with salt and pepper.
- Stir in penne.
- Bring to a boil and then reduce heat and simmer for 10 to 15 minutes, stirring occasionally.
- Stir in shrimp and cook until it just turns pink. Stir in the heavy cream and remove from heat.
- Top with parmesan and fresh basil to serve.
