SIMPLIFY YOUR LIFE

Have you ever felt so out of your routine you just can’t seem to get it back? Coming home from vacation always does this to me. It’s like the better the vacation was the harder it is to figure out how to do normal life again.

In an effort to make getting back into normal life easier, I am taking it easy on myself and making *super* simple dinners this week and I encourage you to do the same, starting with this One Pot Meatball Stroganoff.

ONE POT — FOR REAL!

I love the one pot meal trend so hard. But I don’t love when there are multiple steps of pulling things out of the pot, and putting other things in and repeat and so on.

This one isn’t like that people! When you put something in this pot, it is staying in there until it goes into your bowl for you to enjoy!

ONE POT MEATBALL STROGANOFF RECIPE

This One Pot Meatball Stroganoff is made super simple with Gold’n Plump’s new Chicken Meatballs. They are super delicious just on their own. I’ve made them a bunch of times for my kids and paired them with just some simple noodles and parmesan cheese and sliced up veggies on the side. A super delicious, quick an easy meal before date night.

You can make this dish with my Baked Turkey Meatballs if you’re looking to go the homemade route. But the Gold’n Plump’s Chicken Meatballs make this meal that much simpler.

Gold’n Plump’s meatballs are made with boneless skinless thigh meat, and no artificial ingredients and no antibiotics ever. They are oven roasted, never fried, making them a healthy alternative to traditional meatballs. The chicken meatballs and also super easy to cook up on the stovetop, oven, or microwave. I used the Homestyle flavor for this recipe but they also come in a Pesto Italian flavor, which is totally irresistible as well!

True story, every time I have made this, I end up standing in front of my fridge at 9 p.m. eating the leftovers out of the container. I’m a One Pot Meatball Stroganoff addict.

One Pot Meatball Stroganoff

Serves: 6 servings

Cook: 30 minutes
Total: 35 minutes
If you're looking for a quick, easy crowd pleasing comfort food, this One Pot Meatball Stroganoff is perfect. It only takes 35 minutes and tastes delicious!

Ingredients

  • 1 TBSP olive oil
  • 8 oz sliced mushrooms
  • 2 TBSPs unsalted butter
  • 2 cloves garlic diced
  • 1 tsp paprika
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 3 TBSP flour
  • 1/4 cup white wine
  • 4 cups beef stock
  • 1 package 18 oz Gold'n Plump Homestyle Meatballs
  • 8 oz egg noodles
  • 3/4 cup light sour cream

Instructions

  • In a large skillet over medium heat, heat the olive oil.  Add the the mushrooms and cook until soft and tender.
  • Add the the butter, melt it.  Add in the garlic, paprika, salt, and pepper.  Cook for about 30 seconds being sure not to burn the garlic.
  • Add the flour and whisk into the butter.  Cook for a minute to toast the flour.
  • Whisk in the white wine slowly.  Then slowly whisk in the beef broth.
  • Cover and bring to a boil.  Stir in the noodles and then top with the frozen meatballs.  Cover and cook for 10 minutes or until the noodles are tender.
  • Remove from the heat and stir in the sour cream.
  • Top with the parsley and enjoy!

    I have made this recipe three times already and there is always to much liquid in the skillet. I have attempted to reduce the broth and cover with the cover off when adding the noodles & meatballs. I like the taste especially the porta bella baby mushrooms but can’t figure why it comes out like a soup.

      That stinks Theresa! I’m so sorry! With so many of my recipes I can tell you exactly the step that trips people up but with this one I’m kind of stumped! You are totally sure that you are using the right amounts of everything? Like enough noodles? And you are using the dry ones? I’ve made this recipe a ton of times and it works out perfectly every time.

    I’d love to try this with fresh meatballs not frozen, the frozen ones where I live are terrible, plus I’m Italian so I can make them blindfolded lol. I guess I would jut make them as I normally do and add the fully cooked?

      Yup! Though given the cooking times, you might want to actually make a giant batch of meatballs, freeze them, and then you’ll have some on hand to use for this.

    something in my DNA makes me alter recipes to suit my tastes, so …

    i’m using dried porcinis reconstituted in hot water, plus the strained liquid; also using a yellow bell pepper, because i have one on hand; using smoked sweet paprika because i adore it and i think it’ll enhance the flavors of the porcini and the bell pepper. i’m also adding LOTS more sour cream (not “Lite” but full-fat, thank you) and a good deal of chopped parsley. my frozen meatballs are beef, not chicken, only because that’s what Walmart had at the time. i’m not opposed to chicken or turkey, but if i’d used poultry, i’d be tempted to go with tarragon instead of smoked paprika.

    Does Gold”n Plump still make the chicken meatballs? I went to their website to find where to buy them in my area but that product is not listed. I could make this with my own beef meatballs, but your comments about their meatballs really made me want to try them for something different.

    This was very good. I added mushrooms to my dish as fiance dislikes them and added some hot sauce for a little kick. It was too soupy ,but when I went to put up leftovers, sauce thickened up. Will adjust liquid or flour next time. I’ll also try chicken meatballs and broth. Thanks!
