This Philly Cheesesteak Mac and Cheese is only FIVE ingredients! And its a dinner you can feel great about giving to your family!

So last week we were late to swimming. Which isn’t awesome, because it’s only a half hour class.
(I swear not all of my posts this summer will be about our over-booked extracurricular schedule. Ha! I kid. They totally will be.)
And I want to blame my kids for us being late, but if I search into the depths of my soul, that’s not totally fair. Or is it? I mean, I can pretty much twist anything into being their fault. My muffin top? Legit their fault. Anyway. I digress.
So, we were late to swimming. It was stressful, and annoying, and my kids were not thrilled with me because they knew the truth about who’s fault it was. And . . . they adore swimming. So, this week I got all of my ducks in a row. Those annoying little ducks that like to wander around like a kid chasing a butterfly. And we were five minutes early!
I say to my kids, “Kids! We are five minutes early! Woo hoo!” They look at me with blank boarderline loathing stares. “Isn’t it good we are early? Last week we were late.”
Gavin: “I don’t want to be late. And I don’t want to be early. I want to be right. on. time.”
Ya’ll should be so proud of me. I didn’t even shove him in the pool. 😊
So as you know, my mission this summer is to come up with fast easy dinners that will save our lives. And thanks to Horizon, I’ve found another one! This Philly Cheesesteak Mac N Cheese is *the best.* It starts with their Organic White Cheddar Cheesy Deluxe. Did you guys know that all you need to make it is the box and a boiling pot of water? For real! It would be perfect for camping!
You add in all the flavors that you love from a Philly Cheesesteak, and you top it with some of Horizon’s amazing provolone cheese. My family loves Horizon’s products. I sometimes joke that I think one of Quinn’s legs is made entirely out of their mac and cheese. They eat it all the time. And I love it because I feel so good about giving it to them. Their sliced provolone is no exception, and it makes for the most delicious, flavorful dinner. So cheesy, so perfect, and so flippin’ easy. Only five ingredients guys!
This was one of those recipes that barely made it through the photo shoot. I wanted to just keep taking forkfuls right from the pan.
. . . . and I kind of did.
- 1 package Horizon Organic White Cheddar Cheesy Deluxe
- 1 TBSP olive oil
- 1 pound London Broil, cut into bite sized pieces
- 1 green bell pepper, diced
- 1/2 medium onion, diced
- 6 Horizon Provolone Cheese slices
- Cook the Horizon Organic White Cheddar Cheesy Deluxe as directed.
- In a large pan heat the oil over medium heat. Add the London Broil pieces and cook in batches, removing from the pan when just cooked through. Add the bell pepper and onion and saute until tender.
- Add the meat back to the pan and stir in the macaroni and cheese. Top with the provolone and broil until the cheese is lightly browned.
- Enjoy immediately.
