Cookie Butter might be one of my biggest weaknesses when it comes to food. So when I posted my Peanut Butter No Bake Cookies recently on social media and a reader suggested swapping the peanut butter for Biscoff spread, I nearly lost my mind.

This might be the greatest swap in the history of swaps.

No Bake Biscoff Cookies Ingredients

These cookie butter cookies come together with a few simple ingredients. Once you have a jar of cookie butter, you probably have the rest of the ingredients in your fridge and pantry.

  • Sugar
  • Milk
  • Unsalted butter
  • Old fashioned oats

What is Cookie Butter

Cookie butter is a spread made from Speculoos cookies. It also can be known as Biscoff spread made from Biscoff cookies. It has a subtle cinnamon flavor and is smooth and delicious, making it the star of this cookie butter cookies recipe. I shared the link to order it from Amazon below. How to Make No Bake Biscoff Cookies

This no bake Biscoff cookies recipe comes together in just a few simple steps and no baking time! For the full recipe including all measurements, please scroll to the recipe card at the bottom of the post.

  • Combine sugar, milk, and butter in a saucepan. Bring to a raging boil while stirring constantly so it doesn’t burn.
  • Boil for one minute. This is a very important step. Use a timer to make sure it has been a full 60 seconds, and do not start the timer until you see a full roaring boil.
  • Combine oats, cookie butter, and vanilla. Remove it from the heat and stir in the rest of your ingredients moving somewhat quickly.
  • Form into cookies. Scoop large spoonfuls of the mixture onto a baking sheet with wax paper while the mixture is still hot. Allow to cool completely.

Quick Oats vs Old Fashioned Oats

This no bake cookie recipe uses old fashioned oats. Quick-cooking oats are broken down into small pieces. Your cookies aren’t going to have the same look or texture with them, however, if that is what you have or prefer your cookies will still taste great with them.

Why are my no bake cookies not hardening?

Tips and Tricks

  • You are looking for a raging boil. You want to see a raging really foamy and frothy boil before moving on to your next step, not just a few bubbles.
  • Stir continuously. This isn’t a recipe to walk away from, as it will burn easily.
  • Work quickly. Once the mixture has boiled and you are adding the other ingredients, move fast.
  • To speed up setting and cooling time, place the baking sheet of cookies in the refrigerator.
  • Use real butter, not margarine.

Why did my no bake cookies not set?

The key to getting the cookies to set is bringing your butter, milk, and sugar mixture to a full raging boil for a full minute, watching closely. If your kitchen is overly warm or humid, place the cookies in the refrigerator to set.

Freezing Cookies

These cookie butter cookies are great for freezing. Follow these steps to store them in your freezer for up to three months.

  • Line a baking sheet with wax paper (or just use the sheet you used while making them).
  • Line the tray with the cookies.
  • Put it in the freezer for a half hour to an hour. Then, take them out and transfer them to a freezer-safe bag or container, stacking them.
  • Return to the freezer and freeze for up to three months. These thaw quickly and need very little time out of the freezer before being ready to eat.

No Bake Biscoff Cookies

Ingredients

  • 2 cups granulated sugar
  • 1/2 cup milk
  • 8 tablespoons unsalted butter
  • 3 cups old fashioned oats
  • 1 cup cookie butter
  • 1 tablespoon vanilla extract

Instructions

  • Line two baking sheets with wax paper and set aside.
  • In a large saucepan over medium heat, combine the granulated sugar, milk, and butter.  Bring to a boil, while stirring consistently. It should be a roaring, foamy boil before you move on to the next step.
  • Once it has come to a roaring boil, boil for 1 minute while continuing to stir.
  • Remove from heat and stir in the oats, cookie butter, and vanilla.
  • Using a large spoon, scoop large spoonfuls (about 1 1/2 tablespoons) of the mixture onto the waxed paper. Allow to cool completely. Eat immediately or store in an airtight container for up to a week.
