If you haven’t had this guacamole then you haven’t had The Best Guacamole.
This simple guacamole recipe is just slightly spicy and the absolute perfect dip for whenever you are hosting. It comes together in just a few minutes! Sometimes I like to buy a whole big bag of avocados because I can get them for less. If you do that, make sure you make this avocado salsa and cowboy caviar too. And if you have one more left, make sure you make this cajun cobb salad!
I know what you are thinking right now.
That I don’t actually have the BEST guacamole recipe, but I promise you, I really do. And here’s the best part about it. It’s way easy. It’s minimal ingredients, it’s not a lot of chopping, and, you know. It’s the best.
This was my mom’s recipe . . . . ish (as Gavin would say). A few years ago I was wanting her guacamole, but when I was a dumb teenager I didn’t have the foresight to write down the recipe for every single thing she made. I did have the foresight to write down all my teenage angst, but that hasn’t come in handy so far.
So I called my oldest brother and asked him if he had it. He didn’t. But he had a general idea of what she put in there. (Stupid jerk was 35 when she died, compared to my 26). So I tested it out, made it and it was pretty good . . . BUT for years, I’ve been doing one little step wrong! I haven’t been draining the green chiles. *face palm* So it has been a little too liquidy. And the flavors weren’t *exactly* right. And then this past weekend after making it again and being disappointed with that little piece of it, I re-did it with draining.
Don’t you wish your job was taste testing the world’s best guacamole?
- 2 avacados
- 1 roma tomato, diced small
- 4.5 oz diced green chilies, drained well
- 1/4 a medium red onion, diced very small
- 1/2 tsp kosher salt
- 2 tsps lemon juice
- 1 tsp lime juice
- 1/8 tsp black pepper
- In a large bowl, mash up the avocados. Then mix in the tomatoes, diced green chilies, onion, lemon juice, and lime juice.
- Add in the salt and black pepper, adding more as needed.
