I have told this secret before, but if you’re new . . . (or if you don’t read every single word I right, which would be weird if you didn’t . . . . ) I am a batter addict. “Hello my name is Lisa and if you are raw I want to eat you.” #toomuch?

I wish that meant that I could get into one of those raw diets, but nope. Pretty much if you are raw and you contain eggs, flour, and sugar, I want you. Also . . . weirdly . . . pizza dough. But let’s not talk about that one. I feel like it might be slightly less relatable.

So when my friend, Julianne asked me to write a review of her book, No-Bake Treats, and I saw that THIS Birthday Cake Lasagna was in there, my mouth started watering before I even read the recipe. And then I read the recipe and I started crying sprinkle filled tears of joy.

Her book is PACKED full of amazing no bake recipes, and I know how much you all love those. You will love all the great recipes in this cookbook!

This Birthday Cake Lasagna starts with these amazing little vanilla waffle cookies. It was slightly tricky to find them, but I ended up finding them in the bakery section of my grocery store. They are amazing. If you can’t find them, then just sub in some graham crackers. It will still be delicious!

No Bake Birthday Cake Lasagna

Ingredients

  • For The Pudding
  • 3 large egg yolks slightly beaten
  • 2/3 cup granulated sugar
  • 4 TBSPs vanilla cake mix
  • 2 TBSPs cornstarch
  • 2 cups heavy whipping cream
  • 1/2 tsp vanilla extract
  • For The Filling
  • 2 cups heavy whipping cream
  • 2/3 cup plus 2 TBSPs vanilla cake mix
  • 1/2 cup sprinkles
  • 8 oz cream cheese room temperature
  • For The Layers
  • 11 oz Belgian waffle crisps found in the bakery department
  • 3 TBSPs sprinkles

Instructions

  • In a medium sized bowl, whisk the egg yolks and set them aside.
  • Combine the remaining ingredients (sugar, cake mix, cornstarch, heavy cream, vanilla extract) for the pudding in a medium sauce pan and heat over medium heat until it is warm, but not boiling. Add 1/4 cup of the warm liquid to the egg yolks and whisk to temper them (so they don't cook). Whisk the yolk/liquid mixture into the rest of the liquid over the heat and continue whisking until it thickens.
  • Transfer the pudding to a bowl and cover with plastic wrap right up against the top of the liquid (to prevent a skin from forming). Cool on the counter for an hour and then in the refrigerator for two to three hours.
  • Once the pudding has cooled, make the filling by chilling a metal mixing bowl and whisk for 15 to 20 minutes and then beating the heavy cream in the chilled bowl on high until peaks form. Next beat in the cake mix. Next gently fold in the1/2 cup sprinkles.
  • Take out two cups from the whipped cream mixture you just made and set the rest back in the refrigerator.
  • Beat the cream cheese for two minutes until light and fluffy, scraping down the bowl as you go. Add 1 cup of pudding to the cream cheese, beating it in until combined. Finally, add the two cups of the whipped cream mixture, gently folding it in.
  • To layer your Birthday Cake Lasagna, start with a 9 by 9 inch pan. Add a layer of waffle crisps to the bottom. You may need to break up some crisps to make sure the bottom is covered. Cover it in half of the pudding. Then add half of the whipped cream mixture. Now add another layer of waffle crisps, followed by the rest of the pudding and the rest of the whipped cream. Add a final layer of crips and then the whipped cream you stored in the refrigerator to top. Finally, top with sprinkles.
  • Cover the lasagna and let set for 3 to 4 hours before serving.

    The cookies look like Pizzelles. They are Italian anise cookies and easy to find in the northeast. I’m wondering if what you used are similar or have a different flavor. Looks yummy!

      Hi Laura! Yes, I remember Pizzelles from my childhood with my Italian grandparents. I don’t love anise, so I was on the hunt for vanilla ones. At my grocery store’s bakery they have a few flavors.

    I’m so confused. “Totally from scratch,” but it’s built on purchased pizzelles. I’m not one of those people who is going to complain about Cool Whip or who would turn up my nose at pudding mix. I’m just saying the two things don’t make sense together.

      Ah, Lori, I was waiting for this comment, but honestly, I thought that you would call me out on the little bit of cake mix in there. As they say, you can’t please everyone. And that “totally from scratch” was aimed to pull the people in who do turn their noses at Cool Whip and pudding mix, because they are out there in full force and used to seeing desserts that use them.

    It’s NOT a Lasagna…!!! By definition a ‘Lasagna’ should be at least 7 Layers high; traditionally of noodles, bolognese/meat sauce, a béchamel sauce and cheese…

    Yours is a “Layer Cake”!!!

    Thus, forget the ‘noodle’ aspect, to be a “Dessert Lasagna” it should be at least 7 Layers high… “Trifles” can have a number of layers, it more variable not specific per se…

    Evan calling it a “Dessert Lasagna” I would still expect there would be ‘Noodles’ in it..?? Sweet lasagna-style noodles made w/ chocolate, sugar-cinnimon, peanut butter, pumpkin-spiced, etc., +Plus various jams, jellies and marinades noodles… Then incorporate other various layers of sweet elements such as crumbled cookies, thin layers of various cakes, m&m’s, candies, nuts, etc…

    SOooo, use your ‘noodle’ & imagination bakers & confectioners..!! Hopefully I have sparked, inspired and created a “New” type of dessert revelation… It would be nice if you remember who planted this sweet seed of dessert innovation…

    BTW: When you think of a “Dessert Pizza” it looks like a pizza, right… The article on the The Kitch’N blog titled, “14 Delicious Dessert Lasagnas You Need to Know About”

        First, and foremost!, Thank You!!!, for sharing this recipe, and all of the other amazing things we can create!!! It’s like a little treasure trove of jewels, just waiting to be shined!!! I can’t wait to tackle some of these projects!!! Thank you, again, so very much!!! Second, I don’t normally comment on things like this, frankly because I feel like it’s a waste of time, and our time is so very precious, and certain kinds of people don’t deserve any of our time spent on them. But when I saw the comment posted by “Roget” I instantly became so upset, and deeply infuriated! Yes…I know people can be mean, rude, hurtful, disrespectful, unkind, etc., and I know that (unfortunately) these days it’s seen all over the world. Comment sections, on all kinds of different websites, have the most hurtful things stated about people, to people, and it’s incredibly heart-breaking, and quite disgusting. There is NO definition, anywhere, of lasagna, that says it “should be”, or “is”, “at least 7”, or “any other number” of layers! They all simply say the other terms I listed already. Soooo….(quoting “Roget” again), your “dessert lasagna”, and it’s “layers”, is “by definition a dessert lasagna”, due to the fact that it has more than one- repetitive layer! And this whole, “It would be nice if you remember who planted this sweet seed of dessert innovation” delusion, that “Roget” stated, is “by definition” not only rude, disrespectful, unkind, unnecessary, ridiculous, disgusting, mean, hateful, insane, etc., (I could go on and on, really) but funny as well. Why??? you may ask? Why is it funny? This is the best part of all, I think! – When I was googling “dessert lasagna”, can you guess what I came across? Here’s a hint…the first 5 results all had the same EXACT first sentence beneath the website address, and that sentence was – “It’s NOT a Lasagna…!!! By definition a “Lasagna” should be…” Honest!!! This person, this “Roget”, and their comment, word-for-word, is posted to MANY (at least 7…LOL!!!) various “dessert lasagna” recipes across the internet! Whomever they are, they “cut” and “paste” this exact same comment, and post it everywhere!!! So…very…sad…so heart-breaking that someone has such negativity in their life that it pours out of them, overflowing into the innocent people who cross their paths. Yet, at the same time, (sadly) so funny! This person spends their precious time, wasting away, posting incorrect information, and their delusions of grandeur all over the internet. Okay…I have purged myself of the toxic feelings that popped up after reading the “Roget” comment, and now I feel 100% better!!! :) Now, as I (finally!!! YAH-WOO!!!) say “Goodbye!’, and “Thank you!”, I will click the “post” box, close the webpage, and any, and all, thoughts of “Roget” will disappear entirely from my mind, and my life!!! :) Gotta love the feeling of getting something off your chest!!! :) Thanks, again!!!             I know I am late to the conversation because this happened in 2016. But this cake has 9 layers. There is no need to be upset about how many layers there are and creative thinking always for a synthesize of terms between disciplines and theories. Sorry you had to deal with this uneducated person.
            I have not made my cake yet because I am having trouble finding the vanilla flavored pizzelles or waffle crisp. I wonder if it will work if I put a crepe recipe in a waffle iron. Would that be terribly different?

I was dying reading Rogets comments about getting credit for renaming dessert lasagna ???? ???? but then….to see that he/she wrote the same comment on all dessert lasagnas on the internet???!!!! Too much! ???? TM thank you for your extensive research ????

    While this cake looks great, and I need a no-bake rescue… it’s really a misnomer to say it is completely from scratch. It requires both premade cookies and a boxed cake mix. These are not from-scratch ingredients.
