This Buffalo Chicken Salad is ridiculously simple, but epically good, and good for you, loaded with veggies and topped with Lite Ranch Dressing from Kraft, making it a nutritious delicious dinner.
My family and I have an . . . . intense addiction with a certain buffalo wing serving restaurant that has an odd name. Like, imagine your friends who eat out way too much at restaurants known for their beer and greasy chicken, and then multiply that by like . . .ummm . . . five.
I know, it’s shameful.
It’s just that it’s so easy. And so delicious. But oy vey. My waistline and my pocketbook need a break!
So in the spirit of delicious, and easy, and mmmmm, buffalo, I came up with this awesome dinner salad recipe. And recipe is even a stretch. Recipe makes it seem like there is tons of measuring and ingredients and instructions. But this salad is merely tossing together some delicious nutritious ingredients and then topping it with Kraft Ranch dressing.
So now I can have my celery, carrots, ranch and blue cheese alongside my buffalo chicken, but feel really good about it. Annnnd, it takes less time than loading my kids in the car and yelling for them to sit down over and over while strangers stare at me.
The chicken in this salad is given a good beating to make it thinner because it gives a better sauce to chicken ratio. I like to just put it on a cutting board and flatten it with a rolling pin. Then it is put in a shallow baking dish, covered in buffalo sauce, and baked for 20 minutes. And that’s it. That’s all the cooking that you need to do.
And as you can see, this makes a BIG salad for each person. It left me totally full and satisfied, but not . . . . you know, that feeling like if I fall down I might never be able to get back up again because I’m weighed down with wings. And nachos. And soft pretzels. And beer.
