If you aren’t a beet lover, prepare to be converted. I haven’t always loved beets, but in the last few years, I’ve absolutely fallen in love with this amazing and delicious root vegetable. It is sweet, delicious, and when prepared well can even taste like a sweet treat.
This easy beet salad is only a few ingredients and can be made ahead of time. It makes a perfect super side dish, or double the recipe and bring it to a picnic for an easy dish to pass.
MAKE IT EASIER BY MAKING THE BEETS THE DAY BEFORE
The most time intensive part of this beet salad with feta is roasting the beets. Since I think this salad is best served cold, I encourage you to roast the beets the day before. This will allow the beets to cool completely before adding them to the salad. It also cuts down on the prep time needed to make this great side dish.

BUYING BEETS
I love to buy my beets at the farmer’s market in the summer. Look for a bunch of beets in which the beets are all relatively the same size. This will allow the beets to cook at the same rate. Beets are one of the easiest veggies to buy because it’s hard to find one that is bad.
STORING BEETS
If it’s going to be a few days before you make this glorious salad, no worries. Beets keep in the refrigerator for up to a week.
I like to cut all but an inch of the greens off my beets to make them fit in the fridge better.
BEET SALAD INGREDIENTS
This cold beet salad is just a few simple ingredients.
Start with some roasted beets. I say approximately a pound, because you are just going with what the market sells as one bunch. This is a flexible recipe, so don’t stress over the exact amount.
Add in some feta cheese. If you prefer goat cheese, use that in this beet salad. I think goat cheese and beets pair beautifully as well. That is what I used in my Roasted Beet Salad.
Finally throw in some fresh basil. I love growing basil in my garden in the summer. One plant isn’t that much more than a fresh bunch at the grocery store and then I can have it all the time. If you don’t have a garden, just throw some in a pot on your window sill. You won’t be sorry.
MAKE THIS BEET SALAD WITH FETA EVEN BETTER
I made this salad for my family years ago when they were visiting. I just whipped it up last minute and everyone loved it. It is definitely great as is.
However! If you want to kick it up a notch throw on a little balsamic vinegar and olive oil. Top it with a sprinkle of salt and pepper. It will tie all the flavors together without adding much prep time.

Easy Beet Salad
Ingredients
- 3 roasted beets
- 2 ounces of feta cheese
- 1/4 cup fresh basil leaves sliced
- 1 teaspoon balsamic vinegar (optional see note)
- 1 teaspoon olive oil (optional see note)
- salt and pepper to taste (optional see note)
Instructions
- Toss all the ingredients and serve.
