These Easy Skinny Mojitos could not be simpler, but is so delicious! At just about 80 calories a glass and FOUR ingredients, it is going to be your go to summer drink!
This is such a great light spin on my classic Mojito recipe.
I’ve been summoned for jury duty. Now . . . let me be clear. I’m all about doing my civic duty. But . . . maybe I’d prefer to do it at a time when I had easy access to childcare and I wasn’t a few weeks out from putting my house on the market (!!!) and needed to paint and pack all.the.things.
So given that I’ve already requested to postpone it . . . and was denied. And I don’t just mean denied, I mean DENIED. Like they put it in all caps in the notice just to make it abundantly clear that I was in it. So given that this is something that is going to happen, can we brainstorm all the things that I can say that will make them really not want to use me as a jurist?
Feel free to leave comments below. Bonus points if it is just crazy enough to get me disqualified but not so crazy as to send someone out to investigate me.
So what do you do when it’s pouring not just raining? Like you have a house to paint and pack, work to get done, contracts to fulfill, kids to take care of, and a jury to serve on?
You make mojitos. #duh
I looooooooove me a good mojito. But given that like the second ingredient is sugar, sugar water, or some combination of both, my waistline doesn’t love them. So I took a page out of my friend, Holly’s book and came up with these Easy Skinny Mojitos.
The die hard mojito lovers out there might string me up by my cocktail lovin’ toes for this one, but it turned out so amazing that I don’t even care. And now you have another thing to do with all that amazing mint you have been growing all summer. Though if you are anything like me, you didn’t even try to convince yourself that you were going to use it for anything but mojitos.
Easy Skinny Mojito
- juice of one lime
- 6 fresh mint leaves
- 2 oz of white rum
- 12 oz of diet lemon lime soda like 7UP or Sprite
- Divide the mint leaves and lime juice between two glasses.
- Add 1 oz of rum to each glass and muddle (I like using the bottom of an ice cream scoop to mush everything up).
- Add a little ice, top with the soda, and stir to combine.
