This time last year I was working on a cookbook. ????
I know, crazy . . . because at this very moment you are not actually holding my cookbook. I was days away from pressing the go button on the whole thing and then I had a life flash before me moment. I have nothing but the utmost respect for all my great blogging friends who have written cookbooks and continue to write them and aspire to write more.
But you guys.
They are a TON of work. I realized that it would take away from this blog. And more importantly, it would take away from my kids. So I pressed the pause button HARD.
Some day, there might be a cookbook. Maybe. Or maybe there will be a book all about my weird life experiences surrounding grief – because I think that the world would benefit more from that.

The next one is going to be a twist on fajitas, and for that to happen, we need this homemade fajita seasoning! I made some fajitas the other day with this fajita seasoning, and my husband looked at me while eating them and said, “Something is different.” Eeeeep!! I was going after the taste you get in the fajita seasoning packet you buy in the store . . . and he said this is BETTER!
WHAT IS IN FAJITA SEASONING
People make their fajita seasoning all differently, but I was going after the taste you get from a fajita seasoning packet, and based on my family’s reviews, this one is even better.
- corn starch – not a spice, but it totally helps the seasoning bind to the meat you are cooking it with
- chili powder
- onion powder
- garlic powder
HOW DO YOU USE THIS FAJITA SEASONING
This recipe is broken down into a small batch, perfect for one pound of meat, or a big batch so you always have some on hand. Use three tablespoons of this mix with one pound of meat, like in these Sheet Pan Chicken Fajitas.
Fajita Seasoning Recipe
For 1 ounce or 3 Tablespoons
- 1 tablespoon corn starch
- 2 teaspoons chili powder
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
For a Big Batch (8 recipes worth)
- 1/2 cup corn starch
- 1/3 cup chili powder
- 2 1/2 tablespoons salt
- 2 1/2 tablespoons paprika
- 2 1/2 tablespoons oregano
- 4 teaspoons onion powder
- 4 teaspoons garlic powder
- Combine all of the ingredients.
- Use 3 tablespoons in place of a packet of seasoning mix or for one pound of meat.
