These Five Ingredient Southwestern Lettuce Wraps come together in a snap and are such a delicious light meal!

So, on Saturday Quinn lost her very first tooth. It was a super exciting event! Like a huge deal. She happened to be out running errands with her dad when it happened, so I got a photo with the big gaping hole.
You guys, am I the only person who gets completely TWEAKED out by all things losing teeth? Like the wiggling, the bleeding, the coming out, and then hole that is left there in all it’s disgusting misery? Sweet lord. Barf.
There was a nagging little voice in the back of my head that said, as Quinn was standing in front of me waving her disgusting little tooth around once she got home, “Set a reminder in your phone for 10 pm to be the toothfairy. Do it, Lisa. Your life is a hot mess. Do it. Doitdoitdoitdoitdoit.”
I didn’t listen.
Flashforward to 6:45 a.m. Sunday morning. I wake up in a panic and remember the tooth fairy. But I am certain that the jig is up. Girlfriend does not like to sleep past 6 a.m. But I decide to risk it . . . I grab a dollar bill from my night stand because this is not the first time that the tooth fairy was a space cadet, and I head into her room . . . . She’s still sleeping! It’s a tooth fairy miracle! I creep next to her bed, kneel down, and . . . .
She pops up.
“Mom . . . *groggily* what are you *yawn* doing . . . ?”
“Oh just checking on you honey!”
*Casually shoves an arm under her pillow*
“Mom, I don’t think tooth fairy has come yet,
*Finagle the tooth box open and grab the gross little specimen*
she probably had other houses to stop at first.”
*Slip the dollar in there and pull my arm out*
“Hmmm, maybe! Okay, go back to sleep, I love you! Sorry I woke you up!”
“Love you too mom! It’s okay!”
Older moms . . . please tell me at some point I will have this all under control. *Starts singing, “Tell me lies, tell me sweet little lies . . .”*
Okay, given how crazy my life feels at the moment, easy dinners are an absolute must. These Five Ingredient Southwestern Lettuce Wraps are it. You guys. It really doesn’t get any easier than this. Can we just pause for a moment and laugh about the fact that there are as many words in the title as there are ingredients? Yup. They are easier than the title. These really do come together in a flash and they are perfect if you are trying to eat on the lighter side. I topped mine with sour cream, jalapeños, fresh cilantro, and tomatoes, but they aren’t necessary at all. I ate what you see pictured here, approximately 3.4 seconds after I was done with photos and they totally filled me up! These would make a fast dinner, but they would also make a great left overs lunch!

Five Ingredient Southwestern Lettuce Wraps
- Two Heads of Boston Butter or Bibb Lettuce
- 1 lb of Jennie-O Extra Lean Ground Turkey
- 1 cup salsa
- 1 oz packet of taco season (or 4 TBSPs homemade taco seasoning
- 15 oz can of black beans drained and rinsed
- chopped jalapeños tomates, and light sour cream for topping (optional)
- Spray a large skillet with cooking spray and add the Jennie-O Extra Lean Ground Turkey, and cook over medium heat. Add in the taco seasoning. Cook until the meat is no longer pink and is cooked through.
- Stir in the salsa and then the black beans.
- Serve in pieces of the butter lettuce. Top with jalapeños, tomatoes, and light sour cream.
