This Quinoa Berry Parfait is a make ahead breakfast that is full of flavor and protein to keep you full all morning! Perfect for busy mornings!

You guys, have I mentioned that my kids are starting at a new school? That we are moving? That I’m selling my house . . . . No??? Just kidding. At this point, even I am sick of hearing about it.

So with our new school we have a slightly new schedule and that means that I’m going to be taking the kids to school in the morning. Last year Nathan was dropping them off on his way to work. So . . .

I’m scared!

I’m no stranger to things being busy and crazy in the morning, but I’m used to kind of just getting Gavin and Quinn fed and dressed and then shoving them out the door and then getting breakfast for myself and Piper. And now, we kind of all have to get it together before we walk out the door. Eeeeep!

And I know that I’m not alone in this. I know that there are tons of moms out there who are in the same boat, and even more so. You moms who work outside the house, I have no idea how you do it!! And while I would like to say that we are always able to sit at the table for a well rounded breakfast with placemats and matching napkins . . . that’s just not our weekday reality. Most of the time we are sitting to eat breakfast at home . . . but not always.

But! I have this great make ahead breakfast that is totally well rounded, full of protein and would be perfect as an on the go breakfast! These Quinoa Berry Parfaits start with some Yoplait Original Mixed Berry, which has 6g of protein, and then a cup of cooked quinoa. I looooove quinoa, because it is a grain but has protein! And then you toss in a little fruit and you have a well rounded breakfast you can make the night before and just grab as you walk out the door. This is perfect for the kids, but also for me!

Now they won’t have a hangry (hungry +angry = HANGRY) mom on the drive to school!

Quinoa Berry Parfait

(tap # to scale)

Ingredients

  • 1 6 oz container of Yoplait Original Mixed Berry
  • 1 cup cooked quinoa cooled
  • 1/2 cup blueberries and chopped strawberries

Instructions

  • In a large container, layer the ingredients by starting with 1/3 cup quinoa, 2 1/2 TBSPs Yoplait Original Mixed Berry, and a 1/3 of the berries. Repeat three times.
  • Eat right away or store in the refrigerator for up to 24 hours and eat.

    My kids are SO hangry by the afternoon that it’s not even cool. I get home from work and they fly at me, screeching things. Aaaaaah.
    This would help with the mornings, though! Gotta try.
    And congrats on the new house. Moving is super stressful, but it will all be okay in the end.
