You guys . . . . I think Quinn made a *serious* new friend at school. To protect the innocent I won’t tell you his name. Let’s just say his name is . . . William, but she affectionately refers to him as “Billy.” We are legit hearing non-stop about Billy. First it was that a boy at school had nicknamed her “Peachy” because she was wearing a Princess Peach shirt at school, only at that point she didn’t know his name because #Quinn. Then it was him chasing her at recess. Then she finally learned his name and it was serious games of good guys and bad guys at recess.
And then it was “Billy wasn’t at school, I think he might be sick!” “Billy came back to school but he had a cough at rest time . . . and he had to go home, I’m so worried about Billy.”
You guys, she seriously came running out of school at the end of the day and couldn’t get this out fast enough. Billy is pretty much all we hear about. Nathan the other day:
“I need to go on a field trip or something so I can meet this Billy kid.”
But I’m *so* happy because it is a sure sign that she is adjusting to all day school. It was such a rocky beginning, but I think that we have conquered the hungry days and not enough sleep. A huge part of that is making sure that she eats a really big breakfast and a really filling dinner, since during daylight hours she eats a grand total of four bites of sandwich and three goldfish crackers. #wishiwaskidding
So add this to another in the list of dinner wins for the family! These Shrimp Tacos are straight up amazing and really filling! They start with SeaPak’s super easy to make Jumbo Butterfly Shrimp and then are topped with an amazing combo of corn, avocado, onions, and green chiles. I took a bite of them after shooting them and then proceeded to INHALE all of them. They are maybe my new favorite dinner. Seriously amazing, like something you would get from your favorite taco restaurant.
These are so perfect for a weeknight meal because they are so fast and easy to make. Your family is going to love them! - 9 oz SeaPak Butterfly Shrimp cooked according to package instructions
- 6 corn tortillas
- 11 oz canned corn drained
- 1/2 a small red onion diced
- 1 avocado diced
- 4 oz green chiles drained
- 1 TBSP lime juice
- 1 TBSP cilantro chopped
- 1/2 tsp kosher salt salt
- While the shrimp cook, mix together the ingredients for the corn salsa (everything except the corn tortillas).
- After taking the shrimp out of the oven, spray the corn tortillas lightly with cooking spray and heat up over medium heat in a skillet.
- Cut up the butterfly shrimp, discarding the tails, and divide them amongst the corn tortillas. Top with the corn salsa and serve immediately.
