We’ve been working with the kids on empathy. I’ve decided recently that there are a few things about dealing with other people that I really want my kids to get, and empathy is at the top of my list. So, we’ve been doing a lot of talking to our big kids of, “Well, how would you feel if that happened to you?” and “Can you put yourself in your sister’s shoes and imagine how that made her feel?” and “Well, you don’t like when Gavin does that to you, so now can you understand why Piper is so upset?”
Sometimes I feel like I’m a marriage counselor.
Anyway. So the other day in the car on the way home from school Quinn was trying to tell Gavin something and he told her he didn’t want to talk to her. She sort of freaked a little bit. And then she stuck her foot out and said,
“Gavin. Put your foot in my shoe.”
I was totally confused. How did we go from freaking out to her wanting him to try on her shoe?? And he says, “No Quinny, I know. You are right. I wouldn’t be happy if you said that to me.”
You guys! She meant, “Put yourself in my shoes”. . . !!! Isn’t that the cutest thing you have ever heard?? I burst out laughing when I realized what she meant.
And then she freaked out again.
You guys have to make this Slow Cooker Creamy Tortellini Soup! So, I had to make this twice because the first time I made it waaaaay too creamy. Can you believe there is such a thing? There is. My family ate it, but they weren’t pumped. The second time, they all gave me high fives and told me they loved it!
You can brown the meat if you want to, I did because it makes it easier to break up, but if you are short on time you really don’t have to. The other thing I love about this is you could totally throw in some different veggies. You could stir in some kale at the end, you could put in celery and onions too, you could really mix it up and put in a fancy ravioli instead! It’s packed with SO MUCH flavor and is so delicious. You need it in your lives, I promise.
Slow Cooker Creamy Tortellini Soup
- 1.25 pounds sweet Italian sausage see note
- 3 medium carrots peeled and diced
- 2 garlic cloves minced
- 1/2 TBSP dried basil
- 1/2 TBSP dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 28 oz crushed tomatoes
- 3 cups chicken stock
- 1 lb frozen tortellini
- 2 cups spinach
- 1 cup half and half
- In a skillet over medium heat, break up and brown the sausage.
- Combine the browned sausage, carrots, garlic, basil, oregano, salt, pepper, crushed tomatoes, and chicken stock in a crock pot. Cook on low for 3 and a half hours.
- After three and half hours, turn your crock pot to high and add the tortellini and cook on high for a half hour. After 15 minutes, on high add the spinach.
- Just before serving when the tortellini is done and the spinach is wilted, stir in the half and half.
Recipe NotesI used Jennie-O Sweet Italian Turkey Sausage. I love the browning of it before hand because it helps you to break up the meat and make it less like meatballs in the soup. But if you don't have the time or don't want to dirty a pan, just don't! It will still be delicious.
