I need to be really honest with you . . . . I was going to write this super upbeat post about the New Year, our Christmas, and starting off 2017 and being back at blogging . . . . but I’m not feeling it.
My personal FB feed is full of messages this morning of sadness. There have been a few tragedies in the blogging world, but the one that has struck me most deeply, is the loss of Lindsay and Bjork’s first son, Afton. It struck me so deeply because their beautifully written words, what they went through, it took me right back to losing Elliot.
It made me go back and read this post that I wrote when I was pregnant with Piper and really struggling. It reminded me of this attitude that my mom had right after she was diagnosed with cancer . . . this idea that it is so easy to thank God when things go well in life, but what about when you are given something more challenging? . . . . Like fourth stage breast cancer? Or the death of your second child?
I for sure just lost a few readers.
So, to you that are still with me . . .
I know this is a hard idea to swallow.
But it feels so important. It feels like something that I am going to have to learn, and learn and relearn. It’s not something I would say to someone who is just days out from losing the love of their life. But as someone who has faced devastating loss, more than once, it feels like something God, the universe, whoever, wants me to learn.
We are facing some struggling times in our family (nothing hugely serious, and nothing you should worry about, but struggles none the less), and so this feels like such a good reminder . . . Can I be thankful for the difficult as well as the amazing? Can you imagine if I put up a picture of one of my kids in the ER getting stitches with #blessed?? ???? People would think I had lost my mind.
Anyway. What I’m thinking about today.
I thought you guys would love this soup for the new year. It’s made in the slow cooker using bite sized frozen meatballs, but you could totally make your own, you add that to some seasoned canned diced tomatoes, a ton of veggies, and some orzo, and you have a seriously amazing soup on your hands. It’s about 377 calories a bowl (obviously it depends on what type of meatballs you throw in), and it’s totally filling! So perfect if you are trying to keep things on the lighter side after the holidays.
Slow Cooker Vegetable and Meatball Soup
- 1 medium zucchini diced
- 8 oz sliced mushrooms
- 1 cup carrots sliced 2 small handfuls of baby carrots
- 2 garlic cloves minced
- 6 cups chicken stock
- 15 oz diced tomatoes with basil and oregano undrained
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 T basil
- 1/2 T dried parsley
- 1 pound frozen bite sized fully cooked meatballs
- 2 cups chopped fresh spinach
- 1 cup small noodles alphabet or orzo
- shredded parmesan optional
- In the bottom of a slow cooker, combine the meatballs, zucchini, mushrooms, carrots, garlic, chicken stock, diced tomatoes, and spices.
- Cook on low for 6 to 8 hours or high for 3 to 4 hours.
- Turn the slow cooker to high and stir in the orzo and chopped spinach and cook for another half hour.
- Serve with shredded parmesan.
