I have this really distinct memory of my dad. We were visiting my grandparents, and Ithink there was a football game on that I really wasn’t interested in. I didn’t have any cousins my age, and my brothers were doing something that didn’t include me. So my dad played a game of UNO with me.
I crushed him.
I could not have been more proud of my success. I told everyone about it. It’s totally possible that he let me win, though he is so competitive that I kind of doubt it. Some of my favorite childhood memories of my dad are playing games with him. UNO, Othello, and so many games of memory that looking back I wouldn’t have really blamed him if he would have sold me.
It’s possible that Gavin got my dad’s competitive spirit along with his name, because he loves nothing more than crushing me in a game of memory. I seriously never let him win, and he trounces me all the time. I love playing the same games with Gavin that my dad and I played together as a kid.
Another thing I loved as a kid? Mac N Cheese with salsa! So I told Nathan about how when I was a kid I always loved like a big heaping scoop of salsa on my mac n cheese, and he was totally disgusted . . . until he tried this! We love Horizon Macaroni and Cheese in our house, our kids eat it a couple times a week. And given their love of chorizo, beans, and corn, I knew that they would love this dish as much as I loved my childhood mac n salsa combo.
This dish comes together super fast, but makes for an amazing dinner that feeds the whole family and is perfect for little bodies that are constantly on the go. Which is another reason that our pantry always has at least four boxes of Horizon Macaroni and Cheese in it. It’s a fast meal that keeps my kids totally full and with the protein and organic ingredients I feel really good about them eating it!
Southwestern Skillet Mac
- 1 box of Horizon Macaroni & Mild Cheddar Cheese and the ingredients needed to make it
- 14 oz fully cooked chorizo sliced
- 14.5 oz diced tomatos in cilantro juice and lime
- 1/2 cup black beans
- 1/2 cup corn
- Make the Horizon Macaroni & Mild Cheddar Cheese according to the package directions.
- Fry the chorizo in a skillet over medium heat until lightly browned.
- Add the diced tomatoes and juice.
