Cookie Butter Butterscotch Cookies & An Auction for a Good Cause

Ingredients

  • 1 1/4 cups all purpose flour
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 cup of unsalted butter at room temperature
  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup Cookie Butter softened
  • 1 tsp vanilla extract
  • 1 large egg
  • 1/2 cup butterscotch chips

Instructions

  • Preheat your oven to 350 degrees. And line a baking sheet with your Silpat .
  • In a large bowl, whisk together the flour, salt, baking soda, and baking powder. Set aside.
  • With your mixer set up with it's paddle attachment, cream together the butter and sugars on medium until fluffy, about three minutes.
  • Add in the Cookie Butter, vanilla, and egg, each one individually, waiting until it is fully combined before moving on to the next ingredient.
  • Slowly stir in the butterscotch chips.
  • Make one inch sized dough balls and space them about two inches apart. Bake for 10 minutes, rotating the pan half way through the baking.
  • Allow to cool on the pan two minutes before transferring to a cooling rack.
