Easy Grilled Parmesan Potatoes

These easy grilled potatoes come together in a snap with just three ingredients, plus salt and pepper. You will love these, they are the perfect summer side dish!

Ingredients

  • 1.5 lbs yellow baby potatoes washed and cut in half
  • 2 tablespoons olive oil
  • 2 garlic cloves minced
  • 1 teaspoon kosher salt if using table salt, cut in half
  • 1/8 teaspoon ground black pepper
  • freshly grated Parmesan cheese (optional)
  • freshly chopped parsley (optional)

Instructions

  • Preheat your grill.
  • In a large bowl, combine the potatoes, oil, garlic, salt and pepper. Toss to combine.
    1.5 lbs yellow baby potatoes, 2 tablespoons olive oil, 1 teaspoon kosher salt, 1/8 teaspoon ground black pepper, 2 garlic cloves
  • Place the potato mixture on a large piece of aluminum foil, approximately 8 inches by 15 inches. Pull the edges of the aluminum foil to the middle and pinch the ends making a foil packet.
  • Turn two burners of the grill up high, and turn the remaining two down low.
  • Put the foil packet over the low burners for approximately 30 minutes or until the potatoes are tender, checking at 15 minutes and then again and 20 minutes.
  • Top with Parmesan and parsley if desired and serve while hot.
