Preheat your grill.
In a large bowl, combine the potatoes, oil, garlic, salt and pepper. Toss to combine.
1.5 lbs yellow baby potatoes, 2 tablespoons olive oil, 1 teaspoon kosher salt, 1/8 teaspoon ground black pepper, 2 garlic cloves
Place the potato mixture on a large piece of aluminum foil, approximately 8 inches by 15 inches. Pull the edges of the aluminum foil to the middle and pinch the ends making a foil packet.
Turn two burners of the grill up high, and turn the remaining two down low.
Put the foil packet over the low burners for approximately 30 minutes or until the potatoes are tender, checking at 15 minutes and then again and 20 minutes.
Top with Parmesan and parsley if desired and serve while hot.
