Mocha Fudge Brownies

Ingredients

  • 2 cups all purposed flour scooped and leveled - see note
  • 2 cups sugar
  • 1/2 tsp salt
  • 1 cup cocoa powder
  • 2 sticks butter 16 TBSPs
  • 1/2 cup chocolate chips
  • 2 tsps vanilla
  • 3 eggs
  • 1/4 cup espresso or any strongly brewed coffee

Instructions

  • Preheat your oven to 350 degrees. Spray a 9 by 13 inch baking dish with cooking spray.
  • In a large bowl, mix together the flour, cocoa powder sugar, and salt.
  • In a medium bowl in the microwave, melt together the chocolate chips in the butter in 30 second intervals, mixing in between each one.
  • Add the butter/chocolate mixture to the flour mixture. Then add in the vanilla, eggs, and espresso. The mixture will be thick.
  • Pour/press the batter into the pan and bake for 30 to 35 minutes or just until a toothpick inserted in the middle of the pan comes out clean. Let the brownies cool completely before cutting and serving.

Notes

Make sure that when you measure the flour you scoop it into the measuring cup with a spoon and then level it off. Do not tap down the cup to make sure the measuring cup is full. This will add much more flour to the recipe and likely make it very dry.
